I'd appreciate it if you could tell me the meaning of "appearance" in the first sentence.

"Their appearance would arouse a love of nature in us. If only the surrounding environment were one in which we could encounter wildlife."  [ "Their" in the first sentence refers to "wild animals."]

Could you tell me if it means "the way they look" or  "the act of appearing , moving to a position where you can see them."

It could be taken both ways, but I favour your second interpretation  (... the act of appearing) in this context. The writer is saying that although it would be nice to see the animals, the environment (perhaps an urban area?)  is hostile to animals and it is unlikely that they would appear.
