I would appreciate it if you could help me with the underlined part.

"It could be argued that, since our primate ancestors had to make do without a major meat component in their diets, we should be able to do the same. We were driven to become flesh eaters only by environmental circumstances, and now that we have the environment under control, with elaborately cultivated crops at our disposal, we might be expected to return to our ancient primate feeding patterns."

Could you paraphrase "elaborately cultivated crops" here?  It seems to me that it refers to plant breeding, but I would like to know why "elaborately" is used here.

Yes, I think you are right; it refers to selective propagating of food crops for best yield, nutritional value etc. Probably an oblique reference to GM foods too. 'Elaborately' in this sense is just expressing the lengths that scientists go to in conducting experiments and trials in order to produce such crops
