#1. This book which I bought last week is very interesting.

#2. This book is very interesting which I bought last week.

Is it okay to say #2 instead of #1 when you want to convey the meaning of #1?

No - it is not natural word order. I would probabkly recast the sentence anyway - something like: I bought this book last week and am finding it very interesting.
